Rancilio's revolutionary, completely automatic iSteam wand is available as an option on all the Classe 10 SDE models. It replaces the steam wand on the left side. The barista simply chooses either the frothed (cappuccino) or steamed (latte) button on the control panel and the machine does the rest. According to the froth and temperature settings previously chosen by the master barista, the Classe 10 computer uses a complex computer algorithm to control the precise amount of aeration and heating to produce super consistent results every time. Results are predictable and perfect, since operator error is completely eliminated. In addition, the milk is micro-foamed since the computer program heats the milk first and aerates last thus improving the quality and consistency of the foamed milk. (The technician's menu allows the operator to choose any individual micro-foam level setting and final temperature setting for each of the two programs. Since the operation is automatic, the barista is free to perform other operations while the iSteam performs its magic even steaming more milk on the right side. Some Barista's report a 50% increase in real world productivity with the iSteam. Also, the iSteam is low maintenance and purges itself to reduce cleaning.
A perfect espresso pour is at the heart of every operation, of course, and the Classe 10 takes barista control to a new level. SEQ - (Standard Espresso Quality) technology is both a teaching aid and a quality control tool for the barista. It alerts the barista visually if the dispensing time/quantity is not correct. Each shot is compared against the predetermined "perfect pour" for that button. The program can be set up in two ways the actual pour time in seconds can be displayed, or the SEQ mode which shows "OK" if the pour time is within 10 seconds of your "perfect" pour. This ensures the Barista produces the best possible espresso, time after time, with maximum control over all aspects of the operation. A press of the coffee delivery buttons provides an exact dose of espresso every time and is user programmable for four different shots on each group plus a manual on/off button for custom situations. The re-designed brewing group incorporates an expanded pre-infusion chamber that is capable of extracting the absolute best espresso shot, guaranteeing taste and aroma that is without comparison.
Another tool for the roaster/retailer or professional cafe is the ability to control pre-infusion. Programmable pre-infusion provides ability to customise the pour for individual espresso roasts and blends. Both the pre-infusion time and dwell time can be controlled, or disabled if desired. Another feature is the ability for the technician to control the boiler pressure (which controls the delivered coffee temperature) electronically from the control panel. Again, normally this is pre-set, but allows the experienced roaster/retailer to experiment and obtain the optimum setting for their particular operation and roasting/serving style.
The hot water delivery is controlled by a soft-touch switch and can also be programmed to dispense a pre-determined amount of water (with manual override) for maximum safety and convenience.

Technical Features: The bright LCD display provides the technician, owner and barista with essential information for each of their own purposes. The technician can instantly adjust or check the boiler pressure through the special keypad located behind the lower door panel. Pressure can be incrementally adjusted based on a particular coffee or preference. Further, because the Classe 10 utilizes an accurate thermal sensor, instead of a "Pressurestat" much more accurate boiler temperatures are maintained, with virtually no thermal drift. Pre-infusion can be set on or off; if activated pre-infusion parameters are adjustable. Espresso shot sizes can be super-accurately set based on the impulse water delivery meter.
Long-term reliability is assured because the Classe 10 will advise the owner when softener regeneration is required (based on the local water hardness and the size of the water softener in use). Further, in consultation with the technician, the business manager/owner can have the machine remind when routine service should be performed. This parameter can be based either on a monthly basis or actual machine usage (shots of espresso made). The Classe 10 is also the only "traditional" espresso machine with an automatic cleaning cycle which prompts the barista through the daily cleaning cycle. This program can be disabled if wanted, or in the extreme, can be set to turn the machine off next day if cleaning is not performed as scheduled.
The Classe 10 features two independent water dispensers. One delivers near boiling water for tea and other applications. The second, is one of Rancilio's newest inventions, the 4-TEA. It's a hot -water dispenser that heats fresh cold water with steam. There are 4 programmable settings for temperature output since different teas suite different water temperatures.
In addition, the computer senses the instant either hot-water dispenser is pressed, and immediately activates the heating element. This feature gives the Classe 10 "best in class" boiler recovery during peak period usage. Both hot water dispensers can be programmed to dispense a pre-determined amount of water (with override) for maximum safety and convenience in busy cafes. The electric cup warmer has 3 adjustable temperature settings or can be turned off as desired. The entire body of the Classe 10 is constructed of aluminium with particular attention paid to all finishes, particularly the satin, brushed finish. Rancilio boilers feature independent fully welded heat exchanger. For further ease of use, the Classe 10 uses an optical water level sensor. This removes the headache of scale damaging the water probe which is a problem that older espresso machines have.

A new drip tray design includes removable sections that are constructed of high endurance scratch poof polymers and can easily be cleaned either by hand or in the dishwasher. The redesigned drip tray quickly removes and spilt coffee thus keeping the bottoms of the cups perfectly clean.
The newest addition to Rancilio product line is the Clever steam valve. This new lever allows you to steam milk effortlessly without any knobs to turn. The Clever's ergonomic handle have been designed for ease of use in multiple positions. Flip the lever handle up to the auto-lock position which allows you to quickly steam and froth milk with maximum speed. From the neutral/off position turn the steam valve down a quarter turn and it opens completely for feathering or touching up steamed milk - giving the barista maximum control. The Clever is currently standard on all new commercial espresso machines.
The Rancilio commercial espresso machines are now fitted with EASY FIX. This feature allows the barista to quickly diagnose any problems that may arise without removing a panel! This cuts any downtime since there is no need to wait for a service technician to arrive.
The Rancilio's onboard computer is already quite advanced by powering the element as soon as the hot water or steam valve is opened. The ABM (active boiler management) feature is one of the many features that make the Rancilio espresso machines "best in class". The latest version of the ABM allows the espresso machine to run on 2/3 of the total power for low power areas.
Power supply is sometimes a strain depending on your area. Around the world there is no set voltage and it can range from 207 to 250 volts! This is why the Rancilio engineers fitted the Rancilio commercial espresso machines with V-FLEX. This ingenious device automatically adjust the computer to the incoming power supply ensuring that your espresso machine will function properly unlike older espresso machines that can "act up" when supplied with insufficient power.
The Rancilio Classe 10 is now fitted with PLUG & BREW. This feature reduces programming time since you can simply plug into the onboard computer and upload your brew settings. This also ensures that each machine's brewing cycles are consistent in your cafe.
